The Easiest Aloo Gobi

Far from traditional, this Indian-inspired vegetable side dish is the perfect accompaniment to my Chana Masala or Tofu Tikka Masala. With less than 10 minutes of prep, you can have a delicious, flavorful side while you make the rest of dinner.

The Easiest Aloo Gobi

Ingredients

  • 1 medium (or 2 small) head of cauliflower
  • 1 medium onion, sliced
  • 3 medium yellow potatoes, sliced
  • 1 red bell pepper, sliced
  • 2 to 3 teaspoons olive oil
  • 1 tablespoon yellow curry powder
  • 1 teaspoon salt
  • freshly ground black pepper to taste
  • 1/2 cup chopped fresh cilantro

Instructions

  1. Preheat the oven to 400 ℉.
  2. Place the vegetables on a parchment lined baking sheet, and drizzle with olive oil.
  3. Add the curry powder, salt, and black pepper and toss to combine.
  4. Bake in the oven for 25 to 30 minutes until the vegetables are browned and tender.
  5. Remove from the oven and garnish with cilantro
